Irish (Cranberry) Soda Bread

We have all been inspired by others, my latest was s bit of a baking challenge. The Irish Soda Bread made by Rosie from The Londoner.

This is a very "easy" recipe that any busy person can undertake, especially if you like to entertain


It was honestly very easy even though I didn't have pine kernels. At first I was a little skeptical that it would end up like hers.

 First, put the whole wheat flour, baking soda, salt and cranberries in my mixing bowl ....
Added butter milk, and mixed it all together and it did actually become a fairly unattractive dough

Rolled it up on my wooden board into a ball which, I then split in half.
Turn the halves into two balls of dough, they looked pretty small and not very bread-y


When that is done, pop it in the oven for 30 minutes!




... 30 minutes later


Took it them out and wrapped them in damp tea towels (cotton hand towels found in the kitchen), and put them on the balcony, window or wherever so they can cool down.

The damp tea towels will help them to get a nice crust
Then ta-da, your bread is done, grab some tea  and cheese to spread on your bread and read on, or something...






Ate mine with Laughing Cow cheese









It was a well spent hour of my weekend!
